| Oh...little bites of heaven!!! I could eat them all (that is, if I was allowed!). (by the way, we made these with white chocolate chips because that's what we had on hand at the time) |
No-Bake Energy Bites/Bars
1 cup oatmeal1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated (I mixed all the dry ingredients and wet ingredients together separately, and then combined). I found that the recipe was just a little dry, so we drizzled some molasses on to add more moister--and taste, too! After mixing, the original recipe says to chill in the fridge for half an hour or so, and then roll into balls (if I would do this, I would probably roll in coconut to reduce stickiness when eating). What I did was I just patted the batter into a small 7"x11" glass pan, and put it in the freezer. When I took it out, I cut it in bars and stuck it in the fridge. Next time, I'll probably put it back in the freezer, because it softens some in the fridge. Otherwise...enjoy! Here's where I got the recipe. [Here's a printable version of the original] YUM!

Those look great, I'll have to give them a try with my kids. I love anything that I don't have to turn the oven on for in the summer.
